January 2026: A Burleigh fish and chip institution has emerged from construction chaos with a beach bar makeover featuring mango margaritas and a Balinese-inspired design.

Marking a decade as one of the most visited fish and chip shops along the Gold Coast Highway, Red Hot Cod owners Simon and Buffie Scott have decided to shake things up.

In October last year, Blue Vision Projects ripped up the back courtyard of Red Hot Cod and transformed it into a beach bar.

Mr Scott said the new space was a present to themselves after battling through years of Light Rail Stage 3 construction which was just metres from their venue.

“It’s been a really tough battle staying profitable since the Light Rail Stage 3’s commencement,” he said.

“It’s disappointing the State Government hasn’t compensated or subsidised small businesses at all.

“And it’s been sad to see some of our neighbours not surviving the works.”

In October, Mr Scott celebrated the removal of the “cages” which had been limiting foot traffic for months.

“Pavement is finished, cages are gone. It’s safe to say that The Cod is back.”

Mr Scott said they were inspired by Balinese food and surf culture when creating the design for the new beach bar.

The 100-plus seat venue will be accompanied by an after-dinner “party bar” featuring fresh fish salads, burgers, self-brewed Red Hot Cod Lager on tap and a “cracker coconut margarita”.

“Special mention to our daughter Mila who is involved in running the kitchen and front of house and being hugely involved in the renovation,” Mr Scott said.

The new space was set to have an “official opening” at the end of January.
